In Between Brisket, Pork Shoulder and Chicken

Sorry for my late post on todays game.  I have been up since last night, tending to 20 lbs of delicious meats that have been smoking over oak logs all night long.

As far as todays game is concerned…

Key Matchup – Roy Williams vs Aqib Talib

Let’s be perfectly honest, in Jim Bates’ new scheme, we need man corners who can handle another teams top receiver and do so on an island all by himself.  Last years top pick must become that shutdown corner for the Buccaneers in 2009 in order for us to have any success defensively.  Roy Williams has stepped into Terrell Owens shoes, and just like Talib, he must prove that he is the number one receiver that the Cowboys gave up so many picks for.

Prediction – Cowboys 24 Buccaneers 10

I’ve made no qualms about my aprehension going into this season.  I’m worried that our offense won’t be able to maintain the pace that our defense will set.   Cowboys score 2 offensive touchdowns and one defensive touchdown today @ RayJay.   Ernest Graham will score a rushing TD and steal what will be a nice show by Cadillac Williams.

  1. Vincent says:

THe Buccaneers Defensive Line was almost non existant against the Dallas Cowboys Today. What happened? No Gaines Adams, No Ryan Sims, No Dre Moore, and No Wilkerson. Only one sack and it came by way of Safety-Ronde Barber. We need to pressure the quarterback in this League. Bring back DE Chris Bradwell. Bradwell was pressuring the quarterback on almost every play. What happened to Bradwell anyway? Is He on the practice squad?

You ever try soaking hickory chips for a couple days & adding them to the fire??

  3. That’s generally the way that we do it, but me and the guy I generally do my smoking with were going for a smoked texture and doneness but not necessarily the flavor. The full oak logs with no soaking other than naturally being muggy down here worked to perfection.
